DERUIJTER SPECULAAS WINDMILL COOKIES

In the early past, the Netherlands imported various spices from its colonies. This resulted in special new smells and tastes. Speculaas is perhaps the most striking result of this. It is a cookie dough mixed with the best of these spices, which together are also called gingerbread spices. There is no fixed recipe for the spices, every baker had and has his or her own unique spice mixture, all with the authentic taste of gingerbread.

Although the composition and proportions differ for every baker, the following spices are common; cinnamon, nutmeg, cloves, ginger, cardamom and white pepper. A bakery sometimes adds extra ingredients for its own twist. For example, variations are known with aniseed, coriander seed and/or mace.

The cake was sometimes made extra luxurious by enriching it with candied peel, almonds and/or orange peel. The fact that there are so many possible combinations makes speculaas incredibly unique.

And the composition of De Ruiter's Speculaas? That is a secret that only our own artisan bakers know!

INGREDIENTS:

Wheat flour, sugar, vegetable oils and fats (partially hydrogenated rapeseed oil and palm oil), parliament spices, water, raising agent (E450, E500), emulsifier (471), nutritional acid (E270) preservatives (E202), salt, coloring (E160a). Contains Gluten and traces of nuts, milk and soy.
