OLSEN LUTEFISK

Tested over time and trusted because of the name, Olsen Fish Company has positioned itself as one of the leading Lutefisk producers in the world. Lutefisk, which means lyefish, refers to the early process of soaking the fish. Today, however, Olsen Fish Company believes its process has given Lutefisk a new meaning–one that represents family, fellowship and good times.

Made from genuine Norwegian Ling cod from the beautiful small towns along the Northern Atlantic Coast, our Lutefisk is time-honored, nutritious and ecologically sustainable. We feature four different brands of Lutefisk including Olsen’s, Viking, Kemps and Mike’s, all of which have their own distinct and unique recipe preserved throughout our history.

We offer Lutefisk that is both skinless and boneless and it is sold fresh or frozen. It is commonly referred to as Kettle Ready, which means it is ready to cook. It is always hand graded and hand packed at just the right time. This is a form of art versus a form of science.

We know precisely the time of year when climatic conditions in northern Norway are perfect for catching and drying our fish. The Stockfish we use for producing Olsen Fish Company Lutefisk is caught during the course of a few hectic winter and spring months where the fresh catch is cleaned, filleted and dried in sanitary drying rooms. With complete environmental controls we eliminate any food safety risks and it guarantees us the best quality that we desire, despite the additional cost. We believe that the highest quality Lutefisk is produced from the Stockfish coming from this region and it is worth the extra effort!

INGREDIENTS:

Ling cod, water, sodium hydroxide.

DIRECTIONS:

Keep refrigerated.

Old Fashioned Lutefisk: Combine 3 quarts of water with 1 ½ Tbsp of salt. Bring to a boil, then add fish. Cook 8-11 minutes or until fish flakes. Remove fish from water and serve immediately.

Traditional Lutefisk: Preheat oven to 375 degrees. Place fish in a casserole dish and cover with foil. Bake 30 minutes or so until fish flakes. Remove fish from pan and serve immediately.

Microwaved Lutefisk: Place fish in a microwave safe dish and cover. Cook on medium/high setting 8-10 minutes. Watch closely since microwave powers vary. Remove fish from dish and serve immediately.

Norwegian Lutefisk Taco: Put a piece of lefse on a dinner place. Top with a thin layer of mashed potatoes. Flake Lutefisk on top of potatoes. Pour melted butter over the top. Add salt and pepper to taste.

Perishable Information

Most products we sell can be shipped via Ground without a problem. However, some items must be sent via Express due to their perishable nature including some refrigerated and frozen foods, and chocolate during the summer months.

We give the customer the choice of shipping methods. Our general policy is that we guarantee perishable products when shipped via Express, and the customer takes the risk when sent by Ground. We will not be held responsible for spoilage of perishable products sent by Ground. We prefer to ship perishable products Monday & Tuesday in an effort to avoid weekend losses and reserve the right to delay a perishable shipment to safely schedule it. We may also delay a shipment due to inclement weather.

When shipping perishable foods, our cart will automatically add Ice Pack Shipping depending on the items purchased. Ice Pack Shipping costs $8 (Including Ice Packs). These additional costs will be added to your invoice and show on your credit card. Your order CANNOT be shipped without this payment.
