Cirrus is our Pacific Northwest variation on French soft-ripened cheese. This rich cheese grows creamier and more indulgent with age when it develops a nutty, buttery flavor and a gooey texture that will soothe your palate!

Cirrus pairs well with pears, apples and figs, but it's creamy, buttery flavor is versatile enough to enjoy with dark chocolate, charcuterie, and preserves;
Sauvignon Blanc, Chardonnay, Reisling
Cirrus's best by date is 65 days after it is made. When it's young (65-45 days prior to the best by date) it has a milky fresh, salty flavor with a bit of acidity. As it matures (45 to 20 days prior to the best by date) the ripening will become more noticeable on the outer section of the paste. Within 20 days of the best by date the cheese should be mostly ripened. The ripened area will have a translucent, cream color, which will appear very different from the white unripened section.
Opinions vary on the optimal time to enjoy soft ripened cheese. If you like lighter flavor and a firmer texture, then earlier is better. If you prefer stronger flavors and a soft, creamy texture, then wait until it's closer to the sell by date. Remember this style of cheese changes dramatically as it ages. Experiencing the cheese at different ages is part of the fun, so don't be afraid to experiment.

Most products we sell can be shipped via Ground without a problem. However, some items must be sent via Express due to their perishable nature including some refrigerated and frozen foods, and chocolate during the summer months.
We give the customer the choice of shipping methods. Our general policy is that we guarantee perishable products when shipped via Express, and the customer takes the risk when sent by Ground. We will not be held responsible for spoilage of perishable products sent by Ground. We prefer to ship perishable products Monday & Tuesday in an effort to avoid weekend losses and reserve the right to delay a perishable shipment to safely schedule it. We may also delay a shipment due to inclement weather.
When shipping perishable foods, our cart will automatically add Ice Pack Shipping depending on the items purchased. Ice Pack Shipping costs $8 (Including Ice Packs). These additional costs will be added to your invoice and show on your credit card. Your order CANNOT be shipped without this payment.
