De Troch lambics are brewed by age old methods which depend on spontaneous fermentation. The wort is cooled in shallow, open-aired vats (coolships) which exposes the brew to micro-organisms giving Lambic its unique flavor. After this process, the ale is aged in casks for at least a year completing the spontaneous fermentation process. De Troch is located in the heart of the government protected appellation, Pajottenland region in south west Brussels.
